Red Velvet Cheesecake Brownies Recipe
Ingredients for Red Velvet Mixture:
2 oz dark chopped chocolate (or dark chocolate chips)
1 cup sugar
1/2 cup butter
1 teaspoon vanilla extract
1 1/2 teaspoon red food coloring
Ingredients for Cheesecake Mixture:
2/3 cup all purpose flour
1/4 teaspoon salt
8 oz package cream cheese, softened
1/3 cup sugar
1/2 tsp vanilla extract
Preheat oven to 350 degrees Fahrenheit. Spray an 8 or 9 inch square baking pan with cooking oil spray.
Instructions for Red Velvet Mixture
In a small, microwave safe bowl, melt butter and chocolate together in 10 second increments, stirring in between each increment until really smooth. Set aside to cool.
In a large bowl, whisk together sugar, eggs, vanilla extract and red food coloring. Add in the chocolate mixture and stir until smooth. Batter should be red. If a brighter red is desired, add an additional 1/2 tsp food coloring. Add flour and salt into the bowl and stir until everything is just combined and no streaks of dry ingredients remain.
Pour into prepared pan and spread into an even layer
Instructions for Cheesecake Mixture
In a medium bowl beat sugar, cream cheese, egg and vanilla extract until smooth. Drop by the spoonful into large dollops into prepared brownie layer. Gently swirl cheesecake mixture into red velvet mixture with a butter knife, creating figure 8 designs.
Bake for 35-40 minutes or until brownies are set. A toothpick inserted into the brownies should come out clean and edges will be lightly brown.
Cool in the pan completely before serving.
Makes 24 small brownies.
