Yummy and Easy Chocolate Peppermint Holiday Christmas Whoopie Pies Recipe

Chocolate Whoopie Pie Cookie Ingredients:

1 teaspoon vanilla extract
1 cup milk
1 & 2/3 cups flour
2/3 cup unsweetened cocoa powder
1 1/2 teaspoons baking soda
1/2 teaspoons salt
1 cup brown sugar
4 tablespoons softened unsalted butter
4 tablespoons shortening
1 egg
Parchment Paper

Peppermint Buttercream Filling Ingredients:
2 cups powdered sugar
1/2 teaspoon salt
1/2 teaspoon peppermint extract
4 tablespoons softened unsalted butter
3 tablespoons heavy whipping cream
2 teaspoons vanilla extract
Crushed candy canes or peppermint candies

Pie DIRECTIONS:
Preheat oven to 375 degrees F. Line two baking sheets with parchment paper.

Stir together flour, cocoa powder, baking soda and salt in a bowl and set aside. Using a mixer, in a separate large bowl beat together butter, shortening and brown sugar on low speed until combined. Increase speed to medium and beat until smooth and fluffy. Add 1 egg and vanilla extract to butter mixture and beat for another 3 minutes.

Add half of the flour mixture and milk to the butter and sugar batter and beat on low until incorporated. Add the remaining flour mixture and beat until well mixed.

Drop batter onto prepared baking sheets, using 1 tablespoon or a large spoon, spacing the spoonfuls at least 3 inches apart. Bake for about 10 minutes (per pan). Remove the pies and let cool on the cookie sheet for about 5 minutes before placing them on a cooling rack.

Filling DIRECTIONS:
Beat together powdered sugar and butter in a medium bowl for about 1 minute or until the mixture is crumbly. Add the heavy cream, vanilla extract, peppermint extract and salt and beat on high until smooth for about 3 minutes.

Whoopie Pie Assembly DIRECTIONS:
Place crushed candies on a plate.

Spread filling onto the flat side of one whoopie pie using a knife and create a sandwich with another cake, placing it flat-side down. Repeat with all pies and filling. Roll the edges of the cookies in crushed peppermint.

Serve and enjoy! Pies can be stored for up to 3 days and can be individually wrapped in plastic wrap, if desired.
