Bananas Foster Frosting Recipe by Courtney Whitmore

Ingredients:
1?2 cup banana, mashed (about 1 large banana) 1 teaspoon lemon juice
1 cup unsalted butter
4 cups powdered sugar
2 tablespoons dark brown sugar 1 tablespoon cinnamon
2 teaspoons dark rum (optional) 1 teaspoon vanilla extract
Directions:
Mash banana in a small bowl with lemon juice. In the bowl of an electric mixer fitted with the paddle attachment, cream butter until light and fluffy (about 12 minutes). Add mashed banana and beat for another 12 minutes until well mixed. Add powdered sugar 1 cup at a time. Add in brown sugar, cinnamon, rum (optional), and vanilla extract. Beat for 2 minutes. Add more powdered sugar to thicken frosting or milk to loosen frosting.
Tip: “Bananas Foster is my favorite dessert so I had to turn this classic favorite into a frosting! It pairs well with all types of cakes, whoopee pies, even cookies! You can omit the rum or use rum extract. Want more banana flavor? Add in a teaspoon of banana extract.” – Courtney Whitmore
Yields 4-1/2 cups
Garnish it: sliced bananas, sprinkled cinnamon
