White Chocolate Macadamia Nut Cranberry Cookies Recipe
Yields 6 dozen cookies
4 teaspoons vanilla extract
3 1/4 cups flour
1 teaspoon cinnamon
1 teaspoon baking soda
3/4 teaspoon salt
1 1/3 cups softened butter
1 cup brown sugar
1 1/4 cups granulated sugar
2 large eggs
1 cup dried cranberries
1 cup chopped toasted macadamia nuts
1 cup white chocolate chips
Preheat oven to 375°F. Mix flour, cinnamon, baking soda and salt in large bowl and put aside. In another large bowl, beat butter and granulated sugar as well as brown sugar with electric mixer until fluffy. Add eggs and vanilla to mixture and mix well. Slowly beat in flour mixture until well incorporated. Using a spoon, stir in cranberries, white chocolate chips and macadamia nuts.
Drop by rounded tablespoons onto un-greased baking sheet about 2 inches apart.
Bake 8 minutes or until light brown. Cool on baking sheet for a few minutes then move cookies to wire racks to finish cooling.
