Ritz Crackers Mini Slider Bites Recipe
7 pounds pork shoulder roast
1 onion, sliced
2 clove(s) garlic, minced
2 teaspoon(s) paprika
1 teaspoon(s) kosher salt
1 teaspoon(s) fresh ground black pepper
4-5 cups Coca-Cola
3 cups BBQ sauce
Trim excess skin and fat from pork shoulder roast. Combine paprika, salt, and pepper in a small bowl. Rub mix all over pork roast. Place onion and garlic cloves in bottom of a 4-6 quart slow cooker and add roast along with 1 cup barbecue sauce. Pour Coke over roast until covered.
Cover slow cooker and cook pork on high until very tender and meat falls off bone, about 6 hours. Carefully remove pork from slow cooker and set on a platter. Strain liquid, saving the sliced onion. Place pork and onion back into the slow cooker and shred the meat with a fork. Add 2 more cups of barbecue sauce and mix in. Cook on high until heated (about 8-10 minutes).
When ready to serve, put 1 tablespoon of pork onto a Ritz cracker and place another cracker on top. Enjoy!
