Ilona’s baking description- “Peaches and cream mini pancakes are perfect for a tea party or brunch. They are topped with seasonal peaches, whipped cream, and maple syrup. Instead of making large pancakes they are served in a mini sized so everyone at the party can grab their own little pancake. These peachy pancakes are fluffy and the most tasty treat you’ll ever have. They are easy to make and require only 35 minutes.
Peaches & Cream Mini Pancakes Recipe
1/2 cup whole wheat flour
1 1/2 cup all-purpose flour
1/4 cup cane sugar
1/4 tsp. baking soda
2 1/4 tsp. baking powder
2 cups buttermilk
1/4 cup unsalted butter, melted
5 – 8 peaches, sliced
1/2 cup whipping cream
1 Tbsp. confectioners sugar
In a large bowl mix sugar, whole wheat flour, all-purpose flour, baking soda and baking powder.
In a another medium bowl, whisk the eggs. Add melted butter and buttermilk. Whisk all ingredients together util well combined.
Pour the wet ingredients over the dry and mix spoon. Do not over mix it.
Preheat the griddle or a skillet. Oil the pan. Pour 1 Tbsp. of the batter for each pancake. Cook on low-medium heat for about 2 minutes. When the batter starts bubbling flip on the other side and cook for another 1- 2 minutes.
Beat the whipping cream with confectioners sugar until soft peaks. Serve pancakes with whipped cream and peaches”.
