Healthy Holiday Recipe Series
I don’t know about you, but with the holidays upon us, I am looking for healthy recipes to supplement all of the, ahem, not so healthy traditional recipes I indulge in within the next few months. It makes me feel a little bit better about my holiday consumption!!
I decided to share with you some of the healthy recipes that are a perfect, and perfectly delicious, addition to your traditional fall recipe stash. I’ll share them with you in my Healthy Holiday Recipe Series, starting with these yummy Apple & Flax Seed Muffins.
Apple & Flax Seed Muffins
Makes 12 to 24 muffins depending on your preference.
- 1 and 1/4 cup Carrington Farms Organic Milled Flax Seed
- 1 Tablespoon cinnamon
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1 teaspoon nutmeg
- 4 large eggs
- 3/4 cup sugar or sweetener
- 1/4 cup oil
- 1/2 cup liquid (water, syrup, or apple juice)
- 1 Tablespoon vanilla
- 1 medium apple, chopped somewhat finely
- 1/2 cup chopped pecans (these are optional)
Preheat oven to 350 F. Generously grease a 12-muffin tin. Mix the dry ingredients together, then add the rest of the ingredients. Let batter stand 10 minutes. Scoop the batter into the muffin pan and bake for about 18 minutes until toothpick comes out clean and muffins just barely start to pull away from the sides of the tin.
