One of the most vivid memories I have of childhood is when I went to Disneyland for the very first time. You’d think that it would involve meeting Mickey or Minnie, or sailing along in the little boats listening to “It’s a Small World After All..” While I do have sweet memories of these things, my most vivid memory was being handed a warm, cinnamon-sugary stick of heaven. Yes, my introduction to the churro.
I remember thinking, “Where have you been my whole life??” (I was only 8, but still!).
Whenever I get a hankering for a little bit of childhood nostalgia, I always whip up these Churro Cupcakes. It’s the best of baked goods–sweet fluffy cupcakes with a sugary, crispy chaser.
