No-Bake Pina Colada Energy Bites Recipe

These no-bake pina colada energy bites are filled with tropical flavours that will remind you of pina coladas on the beach. They’re the perfect little healthy treat to serve at your summer gatherings and tropical-themed parties. Better yet, they don’t require any baking so no need to heat up the kitchen!
Additionally, these little bites are packed full of fibre, healthy fats and protein, so they’re great for those guests who are more health-conscious (but no one will ever guess that they’re healthy!) Make up a batch and freeze in advance for a quick and easy treat or appetizer! To bring the tropical theme to life, serve with the cute little pineapple toothpick toppers. Free printables are included!”
- ½ cup unsalted almonds
- ½ cup unsalted cashews
- ½ cup unsweetened coconut
- 1 cup dried pineapple (try to find ones with no-added sugar)
- 1 cup pitted dates
- ½-1 tsp. coconut extract (optional)
- Additional coconut for rolling
- Soak dates in boiling water for 5 minutes to soften.
- Add almonds, cashews and coconut to food processor and pulse until nuts are finely chopped but not a paste.
- Add dates and dried pineapple and pulse until finely chopped and the mixture starts to clump. You may need to add a bit of water to help the mixture bind together.
- Shape the mixture into 1-inch balls and roll in additional coconut.
- Store in a container or ziplock bag in fridge or freezer.
Serves: Makes 25 Bites
